Cooking method

  1. Step 1:

    Step 1

How do you make chicken and cheese patties? Start with the filling. Cut the chicken breast into thin strips, then across into small cubes. The pieces should be quite small — that's what makes the patties so tender.

  2. Step 2:

    Step 2

Grate the cheese on the fine or medium holes of a box grater and add it to the chopped chicken.

  3. Step 3:

    Step 3

Peel and finely chop the onion. Add it to the bowl.

  4. Step 4:

    Step 4

Add a couple of tablespoons of cornstarch and pour in the kefir. Season with salt and spices to taste. Depending on the cheese you may need more or less salt, since some cheeses are quite salty — keep that in mind.

  5. Step 5:

    Step 5

Finely chop the dill and add it to the bowl, then mix everything together well — this is easiest with your hands. The mixture should come together into a more or less uniform mass, with the cornstarch binding it all.

  6. Step 6:

    Step 6

Heat a skillet until hot and add a little vegetable oil. Shape small patties by hand and set them in the pan. Wet hands make shaping easier, so dip them in cold water now and then. Fry the patties a couple of minutes per side, until golden brown.

  7. Step 7:

    Step 7

Transfer the finished patties to paper towels to drain the excess oil. Serve with any side dish. Enjoy!

  • Chicken patties made this way come out really tasty and tender. In place of the dill you can use parsley, cilantro, or green onions — or a little of each. Serve them with a potato side, whether mashed or roasted, or alongside a fresh vegetable salad. It's a great dish for feeding the whole family.
  • Every oil is only good up to a certain point — its smoke point, where it starts to burn and form harmful compounds, including carcinogens. For how to gauge frying temperature and pick the best oil for the job (and which to skip entirely), see here.
  • Important! The wrong pan can ruin even the best recipe. For all the details on choosing the perfect pan for different dishes, read here.
  • If you use a pre-made spice blend, always check the label. These mixes often already contain salt, so factor that in or you'll risk over-salting.
