Chicken and Cheese Patties
A quick, tasty dish for a family dinner. If you love a good patty but want to try something new, give these chicken-and-cheese patties a shot. It's one of the fastest, easiest ways to put delicious, satisfying patties on the table. Since they're made with chicken, they come out light rather than greasy — but still plenty filling.

Step 1:
How do you make chicken and cheese patties? Start with the filling. Cut the chicken breast into thin strips, then across into small cubes. The pieces should be quite small — that's what makes the patties so tender.

Grate the cheese on the fine or medium holes of a box grater and add it to the chopped chicken.

Peel and finely chop the onion. Add it to the bowl.

Add a couple of tablespoons of cornstarch and pour in the kefir. Season with salt and spices to taste. Depending on the cheese you may need more or less salt, since some cheeses are quite salty — keep that in mind.

Finely chop the dill and add it to the bowl, then mix everything together well — this is easiest with your hands. The mixture should come together into a more or less uniform mass, with the cornstarch binding it all.

Heat a skillet until hot and add a little vegetable oil. Shape small patties by hand and set them in the pan. Wet hands make shaping easier, so dip them in cold water now and then. Fry the patties a couple of minutes per side, until golden brown.

Transfer the finished patties to paper towels to drain the excess oil. Serve with any side dish. Enjoy!
