Ham and Cheese Potato Pancakes
Fragrant potato pancakes loaded with cheese and ham! These are a really tasty, quick-to-make dish — potato pancakes (draniki) that work as a snack or a main meal. Use whatever ham you like best, and cut both the cheese and ham into small cubes. Grating the potatoes on the large holes of a box grater releases less liquid. The pancakes brown up nicely and won't stick in a non-stick skillet. Refined sunflower oil is best for frying.

Cooking method
-
Step 1:
- Gather all your ingredients. Peel the raw potatoes and the onion. You'll need a deep bowl for mixing everything together.
-
Step 2:
- Unwrap the ham and measure out what you need. Cut it into small cubes with a knife and add it to the bowl.
-
Step 3:
- Hard cheese works best here. Cut it into small cubes, just like the ham, and add it to the bowl.
-
Step 4:
- Grate the onion on the large or small holes of a box grater and add the pulp to the rest.
-
Step 5:
- Grate the potatoes into coarse shreds and squeeze out the liquid. Add them to the bowl and stir.
-
Step 6:
- Add the raw eggs, plus ground black pepper and salt to taste. Mix until smooth.
-
Step 7:
- Finally, add the flour. Stir with a spoon until the batter is smooth and even.
-
Step 8:
- Heat the oil in a skillet. Spoon the batter onto the hot pan to form pancakes and fry until golden on each side. Use a spatula or fork to flip them.
-
Step 9:
- Drain the finished pancakes on a paper towel, then serve. You get soft, fragrant, delicious potato pancakes studded with ham. They're best eaten hot, with sour cream, fresh vegetables, and herbs. Enjoy!
- If you like, swap the ham for other cured meats, smoked chicken, or bacon. Sift the flour so no lumps end up in the batter. If you'd rather, you can steam the potato pancakes over cabbage leaves, the same way you would meat patties.
