Baked Buckwheat with Mushrooms
A fragrant, tasty, and nourishing dish that everyone will enjoy! You can eat well — hearty and nutritious — even when you're watching your diet or observing a fast. The health benefits of buckwheat go without saying, but cooked this way it's not just good for you, it's genuinely delicious. Round out the meal with a sauerkraut or fresh-vegetable salad, or some home-canned favorites.

Step 1:
How do you make baked buckwheat with mushrooms? Here are the main ingredients you'll need.

Finely chop the onion.

Fry it in vegetable oil until golden.

Cut the mushrooms into large pieces. Mine were big, so I cut each into 6 pieces; smaller mushrooms can just be halved.

Add the mushrooms to the fried onion and cook until the liquid has evaporated.

Season with salt and pepper.

Rinse and pick over the buckwheat, add it to the skillet, and fry everything together for 3 to 5 minutes — this makes the buckwheat fluffier and more fragrant.

Step 8:
Add water at a 1:2 ratio (buckwheat to water), then bake at 350°F (180°C) for 40 minutes. You can then turn off the oven and let it sit another 20 minutes so the grain steams a bit more — but that step is optional.

You can make this dish in one large pot or Dutch oven, or in small individual serving pots.

- Buy fresh, medium-size button mushrooms — bright white, with no spots, bruising, or musty smell, and not slimy to the touch. Rinse them well under a stream of warm or cold water to remove any grit, and trim away any bad spots. Tiny mushrooms under about 3/4 inch (2 cm) don't need peeling at all — just rinse them well. Larger ones are best peeled of their outer skin.
