Cooking method

  1. Step 1:

    Step 1

How do you make oven-baked meat "royale"? Gather your ingredients: pork (I'm using neck/shoulder), potatoes, mayonnaise, mushrooms (I'm using cooked frozen honey mushrooms), onion, salt, and pepper.

  2. Step 2:

    Step 2

Slice the pork into flat pieces and arrange them in a baking dish.

  3. Step 3:

    Step 3

    Season with salt and pepper.

  4. Step 4:

    Step 4

Finely chop the mushrooms and sauté them in a little oil. Spread them over the pork as the second layer.

  5. Step 5:

    Step 5

Pipe a thin lattice of mayonnaise over the top.

  6. Step 6:

    Step 6

Slice the onion into half-rings and add it as the next layer.

  7. Step 7:

    Step 7

Cut the potatoes into rounds and lay them over the top.

  8. Step 8:

    Step 8

Press the layers down gently and finish with another lattice of mayonnaise.

  9. Step 9:

    Step 9

Grate the cheese — I'm using Parmesan.

  10. Step 10:

    Step 10

Sprinkle the grated cheese evenly over the surface.

  11. Step 11:

    Step 11

Bake at 350°F (180°C) for 1 to 1 hour 20 minutes. Cover with foil for the first half hour, then remove the foil and lower the temperature to 325°F (160°C).

  12. Step 12:

    Step 12

Serve hot with fresh or pickled vegetables.

  13. Step 13:

    Step 13

    Enjoy!

  • Keep in mind that every oven runs a little differently, so the temperature and baking time may vary from what's given in the recipe. Adjust as needed to get any baked dish just right.
  • Every oil is good only up to its smoke point — the temperature at which it starts to burn and form harmful compounds. Learn to gauge the right frying temperature and pick the best oil for the job (and which ones to skip altogether).
  • Homemade mayonnaise is worth it — tastier and better for you. You can also swap in sour cream or plain yogurt for part or all of the mayo, in whatever ratio you like, to lighten up the dish.
