Chechen Flatbreads (Chepalgash)
Tender, delicious flatbreads with a creamy cottage cheese filling! These Chechen flatbreads come together quickly and cook in a dry skillet — no oil needed. The dough is made with fresh kefir, and the filling calls for cottage cheese that isn't too wet. The trick to keeping them soft: after cooking, dip the finished flatbreads in warm water to rinse off any excess flour, then brush them with melted butter. Serve these fragrant flatbreads warm — they're wonderful with sour cream or heavy cream.

- Pour the kefir into a deep bowl. Add the baking soda and salt and stir. 2. Sift the flour, add it to the kefir, and knead a stiff dough. Cover with plastic wrap and let rest for 20 minutes. 3. Finely chop the green onion and mix it with the cottage cheese; salt to taste. 4. Add the raw egg to the filling and mix until smooth. 5. Divide the dough into equal portions, about 12 to 15. 6. Roll each portion into a round, spoon on some cottage cheese filling, and pinch the edges closed. 7. Roll out the filled round into a flatbread. 8. Cook in a dry skillet until browned on both sides. 9. Dip the flatbreads one at a time into warm boiled water, then stack them on a plate, brushing each with melted butter as you go. Serve with fresh herbs. Enjoy!
