  • Start by prepping the fish. If you bought ready-cut fillets, just take them out of the fridge. If you bought a whole fish, begin by scaling it, then trim off the fins, remove the head, and gut it. Rinse the fish, pat it dry with a towel, and fillet it by cutting deep along the backbone. Use only the fillets for the grill; save the trimmings for fish soup later. Marinate the fish in a bag to make the job easier and save on dishes — a zip-top bag is best, but a sturdy plastic bag will do. In the bag, combine the sugar (brown is best, but white works), lemon juice, pepper, soy sauce, oil, water, and garlic pressed through a garlic press. Taste and add a little salt if needed. Cut the salmon fillet into portions. Mix the marinade well in the bag, then add the fish. Mix again, rubbing the seasoning into every piece, then seal or tie the bag and refrigerate for 3 hours. In that time the seasonings soak into the fish, making it tasty, tender, and fragrant. About 30 minutes before the marinating is done, get the grill going. Set the fish on a grill grate over the prepared coals. Cook for about 8 to 10 minutes, turning the pieces often for even cooking. Once the fish is firm and opaque, serve it: lift the pieces off the grate onto serving plates. Sprinkle with chopped fresh herbs and serve with a side of vegetables (which you can grill right alongside) and your favorite sauce. Any sauce that pairs with grilled fish works, but a creamy white sauce is especially good. Enjoy!
