Cooking method
-
Step 1:
How do you make lean potato pancakes with mushrooms? Wash the mushrooms and chop them finely.
-
Step 2:
Add the mushrooms to a skillet heated with vegetable oil and sauté until the moisture cooks off.
-
Step 3:
Peel the potatoes and onion.
-
Step 4:
Now grind the onion and potatoes (I run them through a meat grinder). Stir the mushrooms and flour into the potato mixture, then season with salt and pepper to taste.
-
Step 5:
Heat vegetable oil in a skillet, spoon out the pancakes, and fry on both sides until cooked through. Our lean potato pancakes are ready — enjoy!
- During Lent, home cooks have to get pretty creative to keep family meals tasty and varied. Here's a simple, budget-friendly recipe for potato pancakes with mushrooms.
- Oils are only good up to a certain point — the smoke point, where the oil starts to burn and forms harmful compounds, including carcinogens. For how to gauge frying temperature and pick the best oil for the job (and which ones to skip entirely), see here.
- Important! The wrong pan can ruin even the best recipe. For all the details on choosing the perfect skillet for different dishes, see here.
- Instead of fresh mushrooms, you can use frozen or dried ones (you'll need 5–6 times less dried than fresh). Thaw frozen mushrooms any way you like (for example, in the microwave on the appropriate setting — check your appliance's manual) and drain the liquid; or, if a little extra liquid won't hurt the recipe, use them without thawing. Rinse dried mushrooms well, since they aren't washed before drying, then soak them in cold water for at least 2–3 hours.
