How to make crumpets on soda?
Pour warm drinking water into a large and deep container, and then add the specified amount of granulated sugar and salt to it. We also send baking soda (half) there, which does not need to be extinguished beforehand. Mix everything, wait for the crystals of sugar, salt and soda to disperse.
In the same container, sift the flour (about half). It is necessary to sift it in order to saturate it with oxygen - in this case, the crumpets will turn out even more magnificent. Mix everything until smooth. The dough should have the consistency of very thick sour cream.
We scatter the remaining soda over the surface of the dough and mix it carefully again, and then sift the remaining flour and knead the dough. We knead it well. The dough should turn out to be obedient, pleasant to the touch, while quite soft and sticky. You may need a little more or a little less flour than indicated in the recipe. But it is better not to hammer the dough with flour so that the crumpets turn out soft and tender inside. For more convenient work with sticky dough, you can lubricate your hands abundantly with vegetable oil.
Spread the dough on the work surface, lightly dusted with flour. We tear off the pieces from the dough, form them into koloboks, and then form flat cakes.
Put a large frying pan on medium heat, pour vegetable oil into it, warm it up well. When this happens, we turn down the heat and put the crumpets in the pan. Fry them under the lid for 3-4 minutes (until ruddy), then turn them over and fry for another 2-3 minutes (also until ruddy);
We put the finished crumpets on a plate covered with paper towels so that excess fat is absorbed.
We are waiting for the crumpets to cool down, roll them in sugar (if desired, it is possible in powdered sugar) and serve them to the table - to delicious and fragrant tea, warm milk, warming cocoa.
