Pita Stuffed with Chicken

- Sift the flour into a bowl. Sifting is a must — it breaks up any lumps and aerates the flour. Add the instant dry yeast and a pinch of salt, and stir. 2. Pour the warm water into the dry ingredients. Knead a soft dough, starting in the bowl and finishing on the work surface. Roll it into a ball, return it to the bowl, cover with a towel, and let it rise for an hour. 3. Meanwhile, rinse the chicken fillet and pat it dry. Cut it into pieces as you would for cutlets — smallish, about 1/2 inch (1 cm) thick. 4. Crack the egg into a bowl, add salt, and beat with a fork. Put the breadcrumbs in a separate bowl. Pour vegetable oil into a skillet and set it over the heat. 5. Season each piece of chicken with ground black pepper and paprika. Dip it in the egg, then coat it in breadcrumbs. Fry in the oil on both sides until golden. 6. Once the dough has risen, turn it out onto a floured work surface and divide it into 10 pieces. Roll each piece into a round flatbread and let them rise again. 7. Heat the oven to 375°F (190°C). Line a baking sheet with parchment and arrange the flatbreads on it. Bake for 12–15 minutes. 8. Take the pitas out of the oven and let them cool a little. Then cut each one lengthwise almost all the way through, so it opens up like a little box. 9. Rinse the cucumber and tomato, pat dry, and slice into thin rounds. Wash the lettuce and spinach and pat them dry with paper towels. Seed and rinse the bell pepper, then cut it lengthwise into wedges. Slice the hard cheese thin. 10. Spread a thin layer of ketchup inside each pita. Layer in lettuce, cheese, chicken, tomato and cucumber slices, and pepper strips. Top with spinach. Enjoy!
