Chimichangas

Wow your family with a delicious taste of Mexican cooking! Chimichangas make a great snack or light bite — hearty, quick, and easy. A nice change from the usual sandwiches. You'll need tortillas, which you can pick up at any supermarket. A tortilla is a thin wheat flatbread that you wrap the filling in. And the filling is where you can get creative: add or leave out ingredients to suit your taste. This recipe uses a meat filling — really tasty and filling. You can make the ground beef yourself or buy it at the store.

    1. Rinse the piece of beef under running water. Pat it dry with paper towels, then cut it into cubes. If there's any fat, it's best to trim it off. Run the prepared meat through a meat grinder. 2. Seed the bell pepper and remove the stem. Wash it well under running water, then cut it into medium cubes. 3. Peel the onion and cut it into small cubes. Rinse the raisins in cold water, then cover them with hot water and let them sit for 15 minutes. When the time's up, drain the water and pat the raisins dry on paper towels. 4. Put the butter in a skillet over medium heat. Once it melts, add the pepper and onion. 5. Sauté the bell pepper and onion in the butter until the onion turns translucent and the pepper softens, about 7 minutes. 6. Add the ground beef to the skillet and season with salt and pepper to taste. Fry, stirring, for 5–7 minutes, then take the pan off the heat. 7. Cut the Swiss cheese into thin slices. Lay the cheese strips on the tortillas, top with the meat and vegetables, and sprinkle with the raisins. Fold each tortilla into an envelope. 8. Pour vegetable oil into a skillet and set it over the heat. Once the oil is hot, add the wrapped tortillas. Fry until golden and crisp — about 5 minutes per side. If you'd rather not fry, there's a good alternative: brush the chimichangas with melted butter and bake them in a 375°F (190°C) oven until golden and crisp. Your hot Mexican snack is ready — dig in!
