Lamb and Potatoes in a Cauldron

Use small potatoes; if they're larger, cut them in half or even into quarters depending on size.

- Rinse the lamb and cut it into medium pieces (don't cut the meat too small). Peel the onion and slice it into half-moons; wash the lemon and cut it into thin slices.
- Add the onion and lemon to the meat, pour in the vinegar, and stir with a spoon, pressing to release as much juice from the onion and lemon as you can. Cover the container with plastic wrap and refrigerate for half an hour.
- Melt the lamb tail fat in the cauldron, add the meat (setting the lemon and onion aside), and sear until nicely browned. Then cover tightly and let it go another 15 minutes.
- Meanwhile, slice more onion into half-moons, chop the basil and cilantro, and toss with the apple cider vinegar, a pinch of salt, and a pinch of sugar. Mix and let it marinate for 10 minutes.
- Peel and wash the potatoes, add them to the cauldron with the remaining fat (remove the lamb first), and fry until done. You'll know they're ready by their golden crust and how easily a fork slides in.
- Season the finished potatoes with salt and pepper to taste and the cumin, combine them with the lamb, pile everything onto a large platter, and scatter the pickled onion and herbs around it.
