Potato Patties Stuffed with Cabbage

It turns out you can easily swap the pastry in hand pies for potato! When it comes to feeding a precious little one, parents want food that's first and foremost nourishing and wholesome — and, of course, it should be delicious, pretty, and a favorite. One recipe in my collection fits the bill perfectly: potato patties stuffed with cabbage.

  • To make them, boil the potatoes in their skins, then peel them while still warm and pass them through a meat grinder. Add 2 raw eggs to the mashed potato and mix well. Now make the filling: finely chop the cabbage and onion, sauté them separately in butter, then combine, season with salt, add 2 chopped hard-boiled eggs, and mix well. Divide the potato mixture into round patties, place some filling on each, and pinch the edges closed. Roll the patties in flour and fry them in a skillet with hot olive oil. The potato patties with cabbage are ready — enjoy them hot with sour cream and fresh herbs. From my own experience, kids polish these off to the last crumb. A tasty and incredibly wholesome dish!
