Fluffy Apple Fritters with Milk
Fragrant apple fritters for the whole family. These fritters are a treat for everyone, and they don't take much time to make. They come out airy, lightly sweet, and delicious. Thanks to the fruit inside, they taste like a juicy dessert with the aroma of baked apples.

Step 1:
Gather the listed ingredients. The very first step is to make the yeast batter. Stir the dry yeast into the warm milk (no hotter than about 130°F / 55°C) and let it sit for a few minutes while you mix the rest, so the yeast starts to activate. A foamy "cap" should form on the surface.

Crack two eggs into a deep bowl, add the sugar, and beat with a mixer or whisk until pale and fluffy.

Melt the butter and let it cool. Add the sifted flour, a pinch of salt, and the cooled butter to the beaten eggs. Mix everything thoroughly.

Step 4:
Pour the risen yeast-and-milk mixture into the batter. Mix it together. It comes out thick but stretchy, just right for fritters.

Step 5:
Cover the bowl with a damp towel and set it in a warm spot for 45 minutes. In that time the batter should rise to 2–3 times its size.

Choose sweet, not-too-firm apples for these fritters. I used ordinary seasonal apples. Peel and core the apples and cut them into rings. Or slice into rings first and cut out the core with a knife afterward. Pour some sugar into a shallow bowl.

Heat a skillet over medium heat and pour in some of the vegetable oil. Dip each apple ring first in the sugar, then in the batter, and set it in the pan, leaving space between them. Fry the fritters a few minutes on one side until golden, then gently flip and cook the other side through (the finished fritters shouldn't have raw edges). Fry them all this way, adding more oil to the pan as needed.

Serve the apple fritters right away — they're also good warm or fully cooled. Offer them with a glass of milk or a cup of tea, plus honey, jam, or sour cream.
- The apple fritters came out really tasty. Since the apple inside is peeled, it just melts in your mouth. Just don't pick apples that are too firm or too tart. These fritters are a hit with the whole family, especially the kids — mine loved them. The one thing I'd change: next time I'd try cutting back on the yeast, since to my taste it comes through a bit strongly in the finished fritters.
