- Peel the onion and cut it into large chunks. Rinse the pork well, cut it into large pieces, and run it through a meat grinder along with the onion. Add spices and seasonings for meat to taste, plus salt and a little ground pepper. Then pour in a little sparkling water (it makes the patties fluffier) and mix everything well so the spices are evenly distributed throughout. Cover the ground meat with a lid or plastic wrap and refrigerate so it absorbs all the aromatic spices — ideally overnight, cooking the patties the next day. Now form the patties. To make them round, set a sheet of parchment on a board, grease it well with oil, and place a metal ring on it. Pack the seasoned pork into the ring, level it, and press it flat with the round tamper that comes with the ring. Carefully lift off the ring and remove the tamper, then form the next patty. The patties should be no more than 2 cm (¾ inch) thick. Put the formed patties in the freezer for a bit, just so they firm up (don't freeze them solid!). You can, of course, shape the patties any way you like without special tools — this just gives you tidier results. Now heat the electric grill, brushing it with a little olive oil. Once the grill surface is good and hot, lay the patties on it and cook them until golden and nicely browned with pretty grill marks. Serve the grilled patties hot, right away, with vegetables as a great side.
