Garlic King Prawns

Make a super-fragrant seafood dish! Garlic king prawns are a fantastic appetizer for get-togethers with friends, especially with tortilla chips or lavash crisps. But they can also be a full dinner — serve them with fresh bread or a heartier side like rice. The prawns turn out incredibly fragrant and delicious.

  • So, let's get cooking. Rinse the prawns and pat them lightly dry with paper towels. Remove the heads. Peel the garlic cloves and finely chop them with a knife — chop them, don't grate them or press them, so you keep those fragrant bits of garlic in the finished dish. Rub the prepared prawns with salt all over. If that amount of salt seems like too little, add more to taste. In a separate small bowl, stir together the cornstarch and a little water. Set the mixture aside — you'll need it later.
  • Set a wok over medium heat and pour in half the vegetable oil. Heat the oil, then add the chopped garlic. Fry it, stirring, for 30 seconds — until it's fragrant and the pieces start to brown lightly. Take the wok off the heat and scoop the garlic into a bowl, leaving the oil behind — you'll use it for frying.
  • Pour the cornstarch-and-water mixture over the prawns and toss so it coats them fairly evenly. Return the wok to the heat, turn it up to high, pour in the remaining oil, and heat it. Lay the prawns in the wok in a single layer and fry for 1 minute. Then flip them and fry the other side another half a minute. The prawns should turn opaque, which tells you they're done. Give them a good toss at the end. Return the garlic to the wok with the prawns, stir, heat for 30 seconds, and take it off the heat. Your fragrant, delicious dish is ready to serve.
