Kung Pao Chicken

- This dish is unusual and unfamiliar to us but traditional for the Chinese, and it's not hard to make at all. The only real challenge is tracking down all the ingredients — but that's easy at an Asian grocery or a well-stocked supermarket. First, prep the ingredients that need it: rinse the meat well, pat off the excess moisture with a paper towel, and cut it into large pieces; rinse the green onion, dry it, and cut it into long lengths; peel the onion and cut it into wedges;
- rinse the chili and slice it into thin rings; peel the garlic clove and finely mince it with a knife or grate it on a fine grater; rinse and peel the ginger and grate it fine; if the peanuts aren't roasted yet, toast them in a dry pan. Now you're ready to cook. In a small bowl, combine the chicken broth, soy sauce, rice wine, rice vinegar, cornstarch, and honey. Whisk thoroughly until smooth. Set a wok over high heat and heat half the oil in it. Add half the chicken pieces and stir-fry for 3 minutes, stirring now and then, until golden, then transfer to a plate. Fry the rest of the chicken in the other half of the oil and set it on the plate too. Add the coarsely chopped green onion, red onion wedges, minced garlic, chili rings, grated ginger, and the spices to the wok. Stir and cook for 2 minutes. Return the chicken to the wok and cook everything together for 2–3 minutes (until the sauce boils and starts to thicken). Take it off the heat and stir in the roasted peanuts. The chicken is ready! Serve it hot — right away! It's really delicious — definitely worth a try!
