Toasted Bread Apple Pies

A whole new take on hand pies, with a fragrant apple filling! You don't have to stick to apples in this recipe — any fruit or thick jam works, and you can even make them savory with ham and cheese. Every version turns out delicious!

Cooking method

    How do you bake apple hand pies out of bread? Start by gathering all the ingredients. Instead of dough, we'll use toast bread — also called sandwich bread.

    Wash the apple and wipe it dry with a towel. Cut the apple into small cubes.

    Put a pat of butter in a skillet, set it over the heat, and melt the butter. Once it's melted, add the diced apple and cook over medium heat, stirring constantly.

    Then add a little sugar and the honey to the apples and stir to combine. Keep cooking and stirring the filling until all the moisture evaporates and the apples turn soft.

    Then add the ground cinnamon and stir the filling again. Taste as the apples cook and adjust the sweetness to your liking.

    Once the filling is ready, let it cool a bit. Meanwhile, prep the sandwich bread. Using a sharp knife, trim the crusts off all four sides so only the white crumb remains.

    With a rolling pin, roll out each slice of white bread, keeping it square. Rolled into a thin sheet, the bread becomes more pliable — it won't crumble and is easy to work with. These are your "dough" bases for the pies.

    Crack the egg into a small separate bowl and whisk it lightly until smooth. Using a silicone brush, brush the egg wash around the edges of each square.

    Place 1 tablespoon of the cooked apples on one half of each square, leaving the edges of the bread bare (you'll need them to seal the pies). Spread the filling out evenly over that half. On the other (empty) half, cut a few slits with the tip of a sharp knife (I made 5).

    Fold the empty half of the bread over the apple filling and press the edges together all around with a fork. Do this with all the pies. For neater, prettier, even pies, trim off any ragged edges with a knife.

    Line a baking sheet with parchment paper and arrange the pies on it.

    Brush them with the remaining egg wash and place the baking sheet in an oven preheated to 375°F (190°C). Bake until golden, about 15 minutes.

    Take the finished pies out of the oven and let them cool slightly so you don't burn yourself — the filling is very hot. Enjoy!

  • Keep in mind that every oven runs a little differently, so the temperature and baking time may vary from what's listed here.
  • Always wash eggs before using them — even a shell that looks clean can carry harmful bacteria. It's best to scrub them with a brush and a food-safe wash.
