How to make cutlets from cod fillets?
1. Chop the fish fillet to a puree state.
2. Chop pine nuts and parsley in a blender, add to the minced fish.
3. Put the minced fish in a large, spacious bowl.
4. Peel the onion, cut it as finely as possible, and put it in the minced meat.
5. Also add the whole-grain bread crumbs, grated parmesan, break the egg and lay out the capers.
6. Season with salt and pepper, mix the resulting minced meat thoroughly.
7. Moisten your hands with water, form small cutlets (I got 12 pieces from this amount of minced meat).

How to properly cut a whole fish into fillets? Remove the tail, head and fins. Cut the carcass along the spine to the spine. Turn it on its side. With a sharp knife, cut the meat from the backbone bone. Turn the carcass over and cut the fillet from the other side. Clean the inside by removing the black film, as it is bitter and will spoil the taste. Rinse and be sure to dry well.
