- How do you make cod fish cakes?
- Grind the fish fillet to a smooth purée.
- Pulse the pine nuts and parsley in a blender, then add them to the fish.
- Transfer the fish mixture to a large, roomy bowl.
- Peel the onion, chop it as finely as you can, and add it to the mix.
- Add the whole-grain bread crumbs and grated Parmesan, crack in the egg, and toss in the capers.
- Season with salt and pepper and mix everything together well.
- Wet your hands with water and shape small cakes (this amount made 12 for me).
- Brush each cake with olive oil on both sides and fry over medium heat for 3–4 minutes per side.

- Important! The wrong pan can ruin even the best recipe. A good, heavy skillet makes all the difference.
- Every oil is only good up to a certain temperature — its smoke point — beyond which it starts to burn and form harmful compounds. Choose an oil with a high smoke point for frying.
- How do you fillet a whole fish? Remove the tail, head, and fins. Cut along the backbone down to the spine, then turn the fish on its side. With a sharp knife, slice the meat away from the backbone. Flip the fish and cut the fillet from the other side. Clean out the inside, removing the dark membrane, which is bitter and would spoil the flavor. Rinse and be sure to dry it well.
