Kamdicha (Korean-Style Potato and Chicken Salad)
A Korean-style salad you can make right at home — simple and delicious! Kamdicha is one of those Korean-inspired salads that's impossible to turn down. The ingredients couldn't be simpler, and you can swap the chicken breast for beef tenderloin — just keep in mind the beef will take longer to cook than the chicken. Serve kamdicha either cold or warm.

- Peel and wash the onion, then cut it into thin strips.
- Wash and pat the meat dry, then slice it into strips as thin as you can manage.
- Peel and wash the potatoes, and cut them into strips about 2 mm thick as well.
- Put the potatoes in a sieve and rinse under running water, then transfer them to a pot, cover with boiling water, set over the heat, and bring to a boil.
- Drain the potatoes in a colander, let the liquid run off, and put them in a bowl.
- Fry the onion in vegetable oil until lightly golden, then add the sliced chicken and keep frying for 2–3 minutes.
- Add the black pepper, red pepper, and coriander to the onion and chicken, stir, pour in the soy sauce, and cook for another minute.
- Add the contents of the skillet to the bowl of potatoes, season with salt, pour in the vinegar, and toss to combine.
- Serve in a deep salad bowl, sprinkled with chopped fresh cilantro.
- Dig in and enjoy!
