Kamdicha (Korean-Style Potato and Chicken Salad)

A Korean-style salad you can make right at home — simple and delicious! Kamdicha is one of those Korean-inspired salads that's impossible to turn down. The ingredients couldn't be simpler, and you can swap the chicken breast for beef tenderloin — just keep in mind the beef will take longer to cook than the chicken. Serve kamdicha either cold or warm.

    1. Peel and wash the onion, then cut it into thin strips.
    1. Wash and pat the meat dry, then slice it into strips as thin as you can manage.
    1. Peel and wash the potatoes, and cut them into strips about 2 mm thick as well.
    1. Put the potatoes in a sieve and rinse under running water, then transfer them to a pot, cover with boiling water, set over the heat, and bring to a boil.
    1. Drain the potatoes in a colander, let the liquid run off, and put them in a bowl.
    1. Fry the onion in vegetable oil until lightly golden, then add the sliced chicken and keep frying for 2–3 minutes.
    1. Add the black pepper, red pepper, and coriander to the onion and chicken, stir, pour in the soy sauce, and cook for another minute.
    1. Add the contents of the skillet to the bowl of potatoes, season with salt, pour in the vinegar, and toss to combine.
  • Serve in a deep salad bowl, sprinkled with chopped fresh cilantro.
