Potato Pies with Meat

Make these tasty, out-of-the-ordinary little pies for a filling dinner! Potato pies with meat work great on their own — say, as a supper — and they're just as good alongside a bowl of soup or broth at lunch. They come out hearty, with tender dough and a juicy filling. And you don't have to cook up fresh mashed potatoes just for these: yesterday's leftover mash works perfectly.

    1. Wash and peel the potatoes, then put them on to boil (don't forget to salt the water).
    1. While they cook, make the filling:
    • peel and finely chop the onion;
    • heat the vegetable oil in a skillet and cook the onion until golden;
    • add the ground meat and cook for 10 minutes, stirring;
    • season with salt and pepper and stir to combine.
    1. Once the potatoes are done, make the potato dough:
    • drain the water and mash the potatoes;
    • let the mash cool for 5–10 minutes, then crack in the egg;
    • work in the cornmeal a little at a time. The dough should stay soft and tender, not stiff.
    1. Now shape the pies:
    • divide the dough into pieces and roll each into a ball;
    • on a flour-dusted work surface, flatten each ball into a round patty;
    • place a spoonful of filling in the center;
    • gently fold and seal into a pie (the dough is very delicate, so take your time!).
    1. Fry the pies for about 4 minutes per side in hot vegetable oil. Transfer the finished pies to a paper towel to blot off the excess oil.
