Step 1:
Prepare the necessary ingredients for cooking.

Wash the chicken carcass under cold running water. Cut it along the breast.

For frying, it is best to use a cast-iron frying pan or a frying pan with a thick bottom. Heat the butter in a frying pan and put the chicken carcass in it.
Step 5:
The chicken should be fried under the press, for this I built such a structure. She put a fireproof plate on the chicken, and on top, as a load, a saucepan filled with water.
Step 6:
Roast the chicken over medium heat under a press for 15 minutes on one side. Then turn to the other side and fry for another 10 minutes. Then turn down the heat and fry for 20 minutes, also under pressure, turning the chicken over periodically.
Step 7:
While the chicken is frying, prepare the sauce. To do this, cut the coriander greens and chop the garlic.
Step 8:
Combine garlic with chopped herbs, add salt, pepper and grind in a mortar.
Step 9:
Then add cream and water. Mix it up. The sauce is ready.
Step 10:
Now check the chicken for readiness. To do this, pierce it with a fork, if the juice flows pink, then continue cooking.
Step 11:
The chicken is fried, browned and ready. Now pour the sauce over the chicken.
Step 12:
Cover with a lid and soak for 10-15 minutes.
