  • Prep the pork like this: rinse it, and if needed cut it into pieces and trim away any tough connective tissue. Put the meat in a bowl big enough to toss it in, add salt, pepper, and spices, and mix. Now make the marinade: stir together the honey, soy sauce, and mustard, then add the lemon and orange juice and mix well. Pour the marinade over the seasoned meat, making sure every piece is fully covered. Marinate in a cool place for at least two hours, or ideally overnight. Arrange the marinated meat on an oiled baking sheet and roast at 350–400°F (180–200°C) for 60 minutes, until cooked through. Enjoy!
