Mushroom-Stuffed Crêpes

- First, make the crêpes. Crack the eggs into a bowl and beat them with a whisk. Add the salt and sugar. Pour in the milk and mix well. Add the flour a little at a time, stirring until smooth and lump-free. Then pour in the water to thin the batter to a more pourable consistency, and stir in a little vegetable oil. Heat a crêpe pan, brush it with oil, and cook the crêpes on both sides. Stack the finished crêpes on a wide plate. Turn the oven on to 350°F (180°C). Now make the filling. Rinse the chicken, pat it dry with a paper towel, and cut it into small cubes. Wash the mushrooms well under running water, drain them in a colander, then cut them into medium cubes. Rinse, dry, and finely chop the shallot. Grate the hard cheese on the fine side of a grater. Pour vegetable oil into a hot skillet. Once it's hot, add the chopped chicken and mushrooms and fry over medium heat for 4–5 minutes, stirring constantly. Add the flour to the chicken and mushrooms and mix well. Season with salt and pepper. Pour in the milk and stir again, then bring the milk-and-flour mixture to a boil. Cover the pan, reduce the heat to low, and simmer everything for 2 minutes. Take the pan off the heat and stir in the shallot and grated cheese, mixing well again. Let the filling cool. Spoon the chicken-and-mushroom filling evenly into the crêpes and roll them up. Arrange the stuffed crêpes in a baking dish and bake in the preheated oven for 10 minutes. Take them out and transfer to a nice serving platter. The mushroom-stuffed crêpes are ready — enjoy!
