Roe Deer Ribs in the Oven

    1. Peel and finely mince the garlic. Stir together all the marinade ingredients and rub them all over the meat. Let it marinate anywhere from 30 minutes to a full day; if you're going overnight, keep it in the fridge, covered with plastic wrap (or in a zip-top bag). 2. Heat the oil in a skillet and sear the ribs until golden brown. Meanwhile, preheat the oven to 400°F (200°C). 3. Transfer the seared ribs to a baking sheet and roast for about 40 minutes, keeping an eye on them and tasting as you go. 4. While the ribs roast, make the sauce: finely chop the onion and sauté it in a skillet with a little oil. Stir in the soy sauce, tomato paste, balsamic vinegar, and water, then add herbs and spices to taste. Simmer, stirring, until the sauce is smooth and thick. 5. Move the finished ribs to a platter and spoon the sauce over them generously. You've got options here: cut the rack into individual ribs for more crisp, browned edges, or leave it whole for juicier meat. You can also brush the ribs with the sauce a couple of times while they roast, which caramelizes into a deliciously sticky crust; for that version, I'd stir a couple of teaspoons of honey and a star anise pod into the sauce (fish the pod out afterward, or just toss it on the baking sheet with the meat).
