To cook amazing vegetarian lean pancakes with soy milk and water, you just need to know a couple of nuances. The first is practice, practice and practice again. Secondly, soy milk should be diluted with water, you can add a spoonful of mineral water. Third, the dough should stand for a couple of hours.
Usually I first beat butter, water, soy milk, salt, sugar, soda and vinegar. I do it in Magic Bullet, there is a large capacity in the kit for such purposes.
Then I put the flour to sleep and turn it on again. I make the dough according to the consistency of fat kefir, when it still thickens and it makes sense to beat it again before baking, if necessary, dilute it with butter, water or soy milk.
Bake in a frying pan as usual. I lubricate the first pancake. With the consistency, you need to guess so that the pancakes are removed without problems, too soft pancakes can break while you turn them over.
If the dough turns out to be very thick and you want variety, then I make a puree from an apple (fresh), pour it into the dough and bake apple pancakes. Again, there is a lot of moisture in apples, the consistency needs to be monitored.
If I make bland pancakes, then I stew cabbage and then I start pancakes with it.
