Cooking method
- Take a piece of pork—I used an entrecôte (rib cut) with a small bone at one end, which came in handy as a stop so I wouldn't cut all the way through. Slice it into 1 cm (about ⅜-inch) pieces without cutting them fully apart. Peel and coarsely grate the kiwi; cut the quince and tomato into thin slices or rounds and the cheese into thin slices. Season the meat with salt and pepper, rub it with the grated kiwi, and tuck tomato, quince, and cheese into the cuts. Spread any leftover kiwi over the top. Set it in a baking dish and bake in a preheated oven for about 30 minutes. (It's great to surround the pork with potatoes—it gives off a lot of juice that soaks right into them; I added them separately afterward.) The kiwi helps the meat cook very quickly, everything takes on the flavor of the quince for a wonderful, one-of-a-kind taste, and of course the tomato and cheese round it all out.
