Fish Stewed in Sour Cream with Onions

  • Use fillets of any fish you like. If it's frozen, thaw it first—but not in hot water. It's best to take the fish out of the freezer the night before and set it in a colander; over the slow, gentle thaw it will defrost on its own and any excess moisture will drain away. Sprinkle the thawed fillet with a little lemon juice to get rid of that strong fishy smell, then cut it into small pieces. Peel the onion and rinse it under cold running water—chilling it (and the knife) first keeps your eyes from watering while you chop. Slice the peeled onion. Heat a skillet until hot, add a little vegetable oil, and add the onion. Fry for 1–2 minutes, until it turns translucent, then add the fish pieces. Cook everything together for a few minutes—keep an eye on the fish. The water it releases will collect in the pan, so keep cooking until it evaporates and the fish browns a little. At the end, add the sour cream, salt, and spices and stir them into the fish. If the sour cream is thick, add a splash of water. Cover the skillet, lower the heat, and simmer for another 5–7 minutes. Serve with mashed potatoes on the side—they're a perfect match. What I especially love is how the fish soaks up the sour cream and takes on a delicious, slightly creamy finish; the sour cream is what makes it special—that little something extra! It takes hardly any time to make. You can add carrots if you like, or just bake everything in the oven—it's up to you, depending on what you need and how much time you have. Enjoy!
