Royal Potatoes
Delicious potatoes with a crispy crust—give them a try! Royal Potatoes baked in the oven are so tasty and good-looking that they'd be right at home on a holiday table. But at our house we make them far more often than that, because everyone loves them.

- For this dish I most often use pork—preferably a cut with some fat. But I often swap in another meat; it doesn't really matter, the Royal Potatoes still come out delicious. Bacon works great, for instance (just keep in mind the cooking time will be shorter in that case). Put the raw pork in a pot, cover with water, add salt and spices, and cook for half an hour—you can also do this in a slow cooker on a suitable setting. Then take the meat out and cut it into medium pieces. Heat oil in a skillet and sear the meat pieces over high heat until they form an appetizing golden crust. Transfer the meat, along with the oil it cooked in, to a foil-lined baking dish. Peel the new potatoes (in the colder months, just use whatever potatoes you have on hand) and cut them into large chunks. Peel a large onion and slice it into half-rings, or cut it into fairly big pieces—it's up to you. Now toss the cut potatoes and onion with the mayonnaise, salt, and spices. Grate 100 g of the cheese on the coarse side of a grater and add it to the potatoes. Stir, add a few peppercorns, and spread it all over the meat. Cut the tomato into quarters, then cut each quarter in two. Tuck the tomato pieces into the baking dish. Pour a cup of the broth left over from cooking the meat over everything, then put the future Royal Potatoes in the oven to bake. At 400°F (200°C) it takes about an hour, but if it's your first time, check on it now and then—especially if the potatoes are new. When the potatoes are nearly done, sprinkle the remaining coarsely grated cheese over the top. Wait until it melts into a nice golden crust. Then take the Royal Potatoes out of the oven and serve while still hot. Enjoy!
