Cut the potatoes into slices

Cook in salted water for 5 minutes from boiling - so the potatoes will definitely fry and get rid of excess starch

After 5 minutes, take out the potatoes and dry them

Finely chop the fat. You can replace it with cooking fat or just vegetable oil

Fry in a preheated frying pan on a fairly high heat, you don't need to mix at all for the first 5 minutes, then mix very gently, pulling it from below

Fry the potatoes until golden brown

At the very end, salt, add a pinch of black pepper

A pinch of red hot pepper

Some aromatic herbs (I have a mixture of Provencal herbs)

Garlic is passed through a press or three on a fine grater
