Chicken and Potato Hand Pies (Kurniki) with Flaky Pastry
Wonderfully tasty and quite easy to make! A great recipe for homemade savory hand pies for teatime, made from crumbly flaky pastry with chicken and potato — they'll pleasantly surprise you with their refined flavor and are sure to be a hit!

Step 1:
Gather the ingredients and spices for these delicious kurniki.

Start the flaky pastry: sift 500 grams of wheat flour into a large bowl, then add a little salt to taste.

Add 200 grams of butter to the bowl, cut into small pieces ahead of time and well chilled.

Mix and rub everything together with your hands until crumbly.

Step 5:
Pour 250 ml of kefir into the bowl.

Add the yolk of one egg to the bowl.

Step 7:
Mix everything together, then knead the dough well with your hands.

Gather the dough into a ball, then turn it out and shape it.

Cut the shaped dough into ten pieces and put them in the freezer for 40 minutes.

Roughly chop one onion — not too fine.

Add the chopped onion to a skillet with vegetable oil and fry, stirring, until translucent.

Cut the peeled potatoes into small cubes.

Put the cubed potatoes in a deep bowl.

Cut 400 grams of chicken breast into small cubes.

Add the cubed chicken to the bowl with the potatoes.

Add the translucent fried onion to the bowl with the potatoes and chicken.

Add cumin and khmeli-suneli to the bowl to taste.

Add salt to the filling to taste.

Add dried herbs and a black-and-red pepper blend to taste, and mix everything well.

After 40 minutes, take the chilled dough out of the freezer.

Lightly flour the surface and roll each piece of dough into a round about 1/4 inch (0.5 cm) thick.

Put two heaping tablespoons of the rested filling on each round.

Gather the edges of each round over the filling and pinch them together firmly.

Shape the kurniki and place them on a parchment-lined baking sheet.

Brush the tops with beaten egg and put the sheet into an oven preheated to 410°F (210°C).

After 20–25 minutes, take the baking sheet out of the oven and arrange the finished kurniki on a plate.
