  1. Cut the salmon fillet into pieces about 1¼ inches (3 cm) wide, transfer them to a suitable container, and season with salt and ground black pepper. You can also add any fish-friendly spices you like. Toss the pieces with your hands so the salt and pepper coat them evenly. 2. Crack the eggs, separating the whites from the yolks into separate bowls. Beat the whites with a mixer to soft peaks. Beat the yolks with a mixer until fluffy as well. 3. Add the cornstarch to the yolks. If you don't have cornstarch, potato starch works. Add salt too and mix everything together well. 4. Now fold the beaten whites into the yolk mixture gradually, a little at a time, mixing gently. Sift in the flour, add the sesame seeds, and stir again. The batter is ready — it should be about as thick as heavy sour cream. If it's too thick, you can add a little water and mix again. 5. Heat a skillet with vegetable oil. Once it's hot, dip the fish pieces in the batter and lay them in the hot oil. Fry until golden and crisp, then flip and brown the other side too. 6. Set the finished pieces on a paper towel to absorb the excess oil. Serve the fish hot or cold — it's delicious either way!
