Lean Potato Draniki with Onion

A tasty, filling dish for anyone observing a fast. Lean potato draniki (potato pancakes) are made from just a handful of ingredients. The dish is very budget-friendly, but that takes nothing away from the flavor. The draniki come out soft, fragrant, appetizing, and really delicious — hearty and nourishing too, a great dinner for the whole family. Potato draniki are a great way to add variety to a Lenten menu, and you can make them any time of year — they're delicious in winter as well as in summer, when you can make them from new potatoes. 1. Wash the potatoes well and peel them. Next comes the hardest part — grate the potatoes on a medium grater. If you have a food processor, use it; it saves a lot of time and effort. Squeeze out and drain off the liquid the potatoes release. 2. Peel the onion and rinse it in cold water. Grate the onion just like the potatoes, then add it to the bowl. 3. Add salt and ground black pepper to the rest, and mix everything thoroughly. 4. Sift the flour right into the bowl and mix again. 5. Set a heavy-bottomed skillet — cast iron is best — over medium heat. Add the oil, heat the skillet, and spoon on the draniki. 6. Fry the draniki for about three minutes over medium heat, then flip and fry the same amount on the other side. They should turn golden and crisp on each side. 7. Set the fried draniki on paper towels to absorb the excess oil and make the finished dish less greasy. Serve the draniki hot with sour cream or mayonnaise, sprinkled with freshly chopped herbs. Various sauces or a side of vegetables go well with them, as does any kind of salad. Enjoy!
