Fluffy Pancakes with Apple Filling
Fluffy, airy pancakes with a scrumptious filling. Really tasty fluffy pancakes with a fruit filling — kids love them! You can eat these anytime: for breakfast with tea or coffee, for lunch with juice or compote, or for dinner (or a bedtime snack) with a glass of milk! They're also a good fit if you're on a gentle diet.
Cooking method

Step 1:
Crack 2 fresh eggs into a bowl.

Add two tablespoons of sugar to the eggs and stir.

Add a little salt — about half a teaspoon — and stir again.

Next, pour in one cup of kefir (about 200 ml). Mix everything together.

Add vegetable oil to the bowl. I used two tablespoons of sunflower oil, but you could use olive oil or ghee.

Add the baking powder — one packet, or 10 g.

Add a little under a cup of flour, about 136 g.

Mix everything until it's about the consistency of thick sour cream.

Then fry in a hot skillet on both sides. Pour in one ladleful and spread it into an even layer across the pan.

For the filling, dice 200 g of apples.

Dice a banana (180 g) as well.

Step 12:
Put 15 g of butter into a preheated skillet.

Step 13:
Sauté the apples over low heat until moderately soft, about 10 minutes.

Add 3 teaspoons of honey and turn off the heat.

Add the banana to the cooling skillet and stir everything together.

At the end, add 3 tablespoons of powdered sugar.

Spoon about 2 tablespoons of the cooled filling onto each pancake and roll it up.
Fluffy pancakes filled with apple and banana, sweetened with floral honey and powdered sugar! Try this treat and you won't be disappointed! They don't use much oil, so they're a good fit for anyone watching their diet. The fruit-and-honey filling gives them a special flavor and a touch of elegance, and they take very little effort. For the batter, just mix all the ingredients in one bowl and fry the mixture on a nonstick skillet without any added oil — you can lightly brush the pan before adding the batter. Each pancake takes about one ladleful of batter, and the filling uses just one apple and one banana. Feel free to experiment with other fruit fillings — I'm sure they'll be delicious too!
