Skillet Semolina Cake (Mannik) with Kefir and Sour Cream

Something familiar, made a little different. Treat your family to a tasty semolina cake for breakfast. Fold in fruit, nuts, or candied peel and you can surprise them with a new version every day. Mannik is great warm or cold, with tea, coffee, or cocoa — whatever you're in the mood for!

Cooking method

    Stir the semolina together with the kefir and sour cream and let it sit for an hour. This lets the semolina swell so the finished cake has no gritty bits.

    Meanwhile, beat the eggs with 120 g of the sugar, the salt, baking powder, and vanilla sugar.

    Gently fold the egg mixture into the semolina. The batter should be about the consistency of thick store-bought sour cream.

    Line a skillet (I use a heavy-bottomed one) with parchment paper, pour in the batter, cover with a lid, and set it over the lowest heat on the stovetop.

    Cook over the heat for 30 minutes, then turn off the burner and let the cake finish for another 15 minutes. The thing about cooking it in a skillet is that the top won't brown — but trust me, it's baked through and ready to eat.

    Once the cake has cooled, carefully turn it out onto a plate and pour the glaze over the top. To make the glaze: boil 1 tablespoon of sugar (25 g), 2 tablespoons of milk, 3 tablespoons of cocoa powder, and 50 g of butter for 3-4 minutes, until the sugar has fully dissolved.

  • You can soak the semolina overnight and bake the cake in the morning.
