Vanilla Farmer's Cheese Pancakes (Syrniki) with Raisins and Semolina

Step 1:
Gather the ingredients for these tasty, fluffy syrniki.

Start by putting 500 grams of 5%-fat farmer's cheese in a large bowl (low-fat works too).

Add one teaspoon of vanilla sugar to the cheese, plus salt to taste.

Add two tablespoons of sugar to the cheese.

Add three tablespoons of semolina to the bowl.

Crack two eggs into the bowl, mix everything thoroughly, and set the bowl aside for twenty minutes, stirring twice during that time.

After twenty minutes, add five tablespoons of pre-sifted flour to the bowl.

Add one teaspoon of baking soda to the bowl.

Mix everything well and set the bowl aside for another twenty minutes.

After twenty minutes, add seventy grams of raisins to the cheese mixture and stir thoroughly.

Shape the cheese mixture into syrniki of the size you want.

Roll each shaped syrnik in a plate of flour.

Set the floured syrniki on a plate.

Heat a skillet with a little vegetable oil and fry the syrniki until golden on each side.

Flip the syrniki, lower the heat to just below medium, cover, and fry until golden on the second side.

Transfer the fluffy syrniki to a plate lined with napkins or paper towels to drain the excess oil.
