- You can buy Korean carrot salad ready-made at the store, along with bottled dressings, marinades, and packaged seasoning mixes for it. But this simple dressing is easy to make at home from spices you probably already have on hand. Not only will the finished salad taste better and fresher than store-bought, it also won't have the preservatives and artificial flavorings you'd find in a commercial version. Put the coriander in a dry skillet and warm it for about a minute over medium heat — this brings out its aroma. Transfer the coriander seeds to a mortar and grind them with the pestle (a coffee grinder or spice mill works too). Pour vegetable oil into a skillet and heat it. Add a peeled onion cut into slivers and fry it for 3-4 minutes over medium heat, then remove and discard the onion — we only used it to flavor the oil. Pour the oil into a bowl and add the ground hot pepper, ground coriander, sweet paprika, sugar, salt, soy sauce, and garlic powder (if you don't have garlic powder, you can press fresh garlic cloves into the marinade instead). Stir well so the flavors and aromas open up and blend. Pour in the vinegar — distilled white, wine, apple cider, or any other vinegar works. Stir again, and the dressing is ready. Feel free to adjust the proportions and spice mix to your taste. All that's left is to grate fresh, juicy carrots on a Korean-salad grater, toss with the dressing, and let the salad marinate in the fridge or another cool spot for 3 hours. Then serve this simple, tasty salad, or use it as a base for other salads and appetizers. Enjoy!
