Creamy Baked Potatoes with Chanterelles and Cheese

The mushrooms and potatoes bake together into one delicious dish. Chanterelles have been my favorite mushrooms since childhood, and I'm completely indifferent to the rest. But the moment I get the chance to buy these bright, fragrant mushrooms, I start thinking about what else I can make with them.

Cooking method

    Gather your ingredients. To bake potatoes with chanterelles you'll need: potatoes, chanterelle mushrooms, cream (20% fat), cheese, vegetable oil, ground black pepper, and salt.

    Wash the chanterelles thoroughly and pat them dry.

    Heat the vegetable oil in a skillet and fry the chanterelles until the excess moisture cooks off.

    Wash and peel the potatoes, then slice them into rounds that aren't too thick.

    Grate the cheese on the large holes of a box grater.

    Arrange the potato slices in a baking dish, overlapping them. Season the potatoes with salt and pepper.

    Spread the fried chanterelles evenly over the top.

    Pour in the cream. Season the mushrooms with salt and pepper, but go easy on the salt since the cheese on top is salty too.

    Scatter the grated cheese evenly over everything.

    Cover the dish with foil and bake in an oven preheated to 350°F (180°C) for 50 minutes.

    Remove the foil and bake the potatoes and mushrooms for another 20 minutes or so, until the cheese is golden.
