Fried Potatoes with Oyster Mushrooms

A tasty potato-and-mushroom dish that's filling and sure to please. This is a simple recipe for delicious fried potatoes with oyster mushrooms. For extra flavor, you can swap one tablespoon of the vegetable oil for butter. Use whatever mushrooms you like best.

  • Cut the potato into 4 pieces and boil in water for 5 minutes. Dice the oyster mushrooms. Cut up the potato. Add 1 tablespoon of oil to a preheated skillet, add the oyster mushrooms, and season with salt. Cook for 8 to 10 minutes over medium-high heat, then transfer the mushrooms to a plate. Add more oil to the pan and fry the potatoes over medium-high heat for 8 to 10 minutes, stirring every 2 minutes. Add the mushrooms back to the potatoes and season with salt and pepper. The oyster mushroom is a prized, low-calorie food (38–41 kcal) packed with nutrients the body needs. With a protein content of 15–25% and a full range of amino acids, including the essential ones (valine, isoleucine, leucine, lysine, methionine, threonine, tryptophan, phenylalanine), it outdoes every vegetable crop except legumes and comes close to meat and dairy. Its protein is highly digestible, rising to about 70% after cooking, on par with the protein in rye bread. The fat content is low, and about 67% of it is polyunsaturated fatty acids. Oyster mushrooms are a natural source of statins (lovastatin), which help inhibit cholesterol production. Carbohydrates make up 68–74% of the dry weight, with easily digestible sugars (glucose, fructose, sucrose) accounting for 14–20%. Beta-glucan polysaccharides isolated from them have strong antitumor and immune-boosting effects, while the mannitol and chitin in their fiber act as effective binders of toxins. Their minerals include potassium, phosphorus, iron, calcium, cobalt, selenium, zinc, copper, and more. Oyster mushrooms are also an excellent source of both water- and fat-soluble vitamins, comparable to meat, vegetables, and fruit: the fruit bodies contain the full range of B vitamins, plus vitamin C, vitamin PP (5 to 10 times more than in vegetables), D2, and E.
