Zucchini Roll-Ups with Cream Cheese

A quick, tasty, and wholesome way to cook zucchini. Early summer is peak season for young vegetables, so for a light seasonal appetizer, I suggest making zucchini roll-ups with cream cheese.

    Young, medium-sized zucchini work best for roll-ups. Wash them and slice them lengthwise into planks about 1/4 inch (5 mm) thick. Lay the planks on a cutting board, salt them, and let them sit for 10 minutes.

    Heat the vegetable oil in a skillet and fry the zucchini on both sides until tender. Use only the wider middle slices for the roll-ups — the outer slices are tougher and don't roll well, so save those for the classic version with garlic and mayonnaise.

    While the zucchini cools, make the filling: finely grate the cream cheese and press or grate the garlic. Season the cheese-and-garlic filling with ground black pepper, add salt if needed, and stir in the mayonnaise — the filling is ready. Cut the tomatoes into small strips, and wash and dry the parsley.

    Take a cooled zucchini slice and spread a thin layer of the cheese-garlic filling over one side. Set a piece of tomato at the wider end, add a few small parsley sprigs beside it, then carefully roll it up and set it on a lettuce leaf. Repeat with the rest of the zucchini slices.
