Step 1:
Prepare all the necessary ingredients.
Step 2:
Young medium-sized zucchini are better suited for making rolls. Zucchini should be washed and cut lengthwise into plates, about 5 mm thick. Spread the plates on a cutting board, add salt and leave for 10 minutes.
Step 3:
Heat the vegetable oil in a frying pan and fry the zucchini on both sides until cooked. For rolls, we use only the middle parts of zucchini, since the side parts are coarser and do not curl well into a roll, they can be prepared according to the classic recipe – with garlic and mayonnaise.
Step 4:
While the zucchini is cooling down, we will prepare the filling for the rolls: we will rub the melted cheese on a fine grater, we will pass the garlic through the press or we will also rub it. The filling of cheese and garlic is seasoned with ground black pepper, if necessary, salt and season with mayonnaise – the filling is ready. Cut the tomato into small cubes, wash the parsley greens and dry them.
Step 5:
Take a cold fried zucchini and spread the cheese-garlic mixture with a small layer on its entire surface on one side. Then we put a piece of tomato on the wider edge of the zucchini. Next to the tomato we put small sprigs of parsley. Now carefully wrap the roll and put it on a lettuce leaf. So do it with all the fried zucchini plates.
Step 6:
Ready-made rolls will look great both on the family dining table and on a magnificent feast. This is a great spicy snack. The dish is very satisfying. Zucchini rolls with melted cheese are ready! Bon appetit!
