  • You can make this tasty, fragrant dish with any fish, not just pollock, and either fresh or frozen. If using frozen, take it out ahead of time to thaw. Rinse the fish, clean it if needed, rinse again, and pat dry with paper towels to remove excess moisture. Lay the fish on your work surface and cut it into serving pieces. Wash and peel the carrots and cut them into small cubes, or grate them coarsely—whichever you prefer. Peel the onion, rinse it, and dry it, then dice it the same size as the carrots, or slice it into half-rings. Set a large, deep skillet over medium heat, add the oil, and heat it well. Add the onion and fry for 2–3 minutes, then add the carrots and stir well. Cook together for 10 minutes, stirring occasionally. Add the fish pieces, stir, and cook for 10 minutes, stirring the fish and vegetables from time to time. Add the sour cream, stir, then season with salt and black pepper, stir again, and taste, adding more salt if needed. Cover the skillet, lower the heat to a minimum, and cook everything together for 15 minutes. Serve the fish hot, garnished with fresh herbs. Enjoy!
