Cooking method
We will cook shish kebab in three stages. The first stage is the preparation of marinade, which will make the meat soft and juicy. The second stage is the preparation of meat and its pickling. The third is cooking on the grill directly. The second stage is the longest in time, but, we can say, it is he who guarantees an excellent result in the end.
So, let's get down to business!
Stage 1. We prepare the marinade.
Pour the specified amount of olive oil into a small bowl, and then measure the balsamic vinegar and soy sauce there. Mix everything well. Now we put Dijon mustard in a bowl, add Italian herbs, pour spices (a mixture of 5 peppers is ideal). We close the bowl tightly with a lid and shake everything well until the ingredients are completely combined. The marinade is ready and you can move on to the next stage.
2 stage. We prepare and marinate the turkey.
Wash the turkey thighs, then dry them with paper towels, blotting excess moisture with them, put the meat on a cutting board. Cut the turkey into large pieces, about the same size. We put the pieces of meat in a large container.
Peel the onion, rinse it with cold water, dry it with a paper towel. After we cut the onion finely and put it in a sieve, squeeze out the juice. Next, we spread the chopped onion to the turkey meat, mix everything well, as if rubbing the onion into the meat.
Pour the marinade on the turkey pieces, mix everything well, cover the container tightly with a lid, put it in a cold place for 2-2.5 hours.
stage 3. Fry the barbecue!
Prepare the barbecue in advance. When the coals are almost ready, we take out the meat that has managed to marinate well. We prepare the skewers. We string pieces of turkey thighs on them and fry them until cooked over hot coals. Do not forget to turn the meat over in the process so that it is well fried and browned from all sides.
When the meat is almost completely ready, we spread finely chopped fresh dill on it. We keep the meat on the fire for a few more minutes, and then remove it from the grill and spread it on a large dish.
Delicious and juicy turkey kebab is ready! It is best to taste it hot!
