Beef with Kiwi and Cheese
Juicy beef slices topped with kiwi and melted cheese. I found this dish long ago in a professional cooking magazine, drawn in by the combination of meat and kiwi. I love meat with fruit, but I'd never cooked with kiwi before. To keep the beef juicy, pound it well and sear it quickly over high heat.

- Rinse the beef tenderloin, pat it dry, and cut it across the grain into 12 slices. 2. Pound the beef slices lightly on both sides, season with salt and pepper, and sear over high heat in oil until golden. 3. Transfer the seared beef to a foil-lined baking sheet. 4. Peel the kiwi and cut into rounds. 5. Coarsely grate the cheese. 6. Brush each piece of beef with mayonnaise, top with kiwi rounds, and sprinkle with the grated cheese. 7. Put the baking sheet in a preheated 400°F (200°C) oven and bake until the cheese is golden and bubbly. 8. Serve the beef with a side of fresh vegetables and herbs.
