- Chicken breast is a lean, healthy meat, which matters especially if you're eating clean. There's just one catch when you cook it: it's very easy to dry out. To keep the breast tender and juicy, dip it in an egg-and-milk wash before frying. The crisp breading that forms not only gives the finished dish an appetizing crust but also seals the meat's juices inside. Rinse the chicken breasts and pat them dry with a paper towel. Trim away any bones, membranes, and fat. Wrap each breast in plastic wrap and pound it with a rolling pin or a meat mallet until it's about 1/2 inch (1 cm) thick. In a large bowl, combine the breadcrumbs with salt and pepper. Grate the Parmesan finely and stir it into the crumbs; mix well. Make the egg wash: rinse the eggs, crack them into a deep bowl, and beat with a fork or whisk. Warm the milk slightly (not hot!) and pour it into the beaten eggs, then whisk again — your egg wash is ready. Set up your breading station: the pounded chicken breasts, a big plate of the crumb mixture, and the bowl of egg wash. Dip each piece of chicken in the egg wash first, then coat it generously in the seasoned crumbs, making sure every part is covered. Heat the vegetable oil in a skillet. Once it's hot, add the breaded chicken and fry about 3–4 minutes per side, until beautifully golden. Transfer the fried chicken to a paper towel to absorb excess oil. Rinse, dry, and finely chop the parsley. Arrange the finished breaded chicken breasts on a nice platter, garnish with the herbs and lemon halves, and serve. Enjoy!
