Skillet Beef with Prunes

  • Gather everything you need to make beef with prunes. Rinse the meat and trim off the membranes and sinew. Wash the prunes. Peel the onions. Cut the beef into large chunks (they'll stay juicier that way). Add the meat to hot oil in a skillet and sear until browned; keep it in a single layer so every piece gets a good crust. Add the onions, cut into half-moons, to the seared meat and cook for another 3–4 minutes. Add the tomato sauce and season with salt and pepper to taste. Stir everything together and pour in the water. Cover and simmer over low heat for 30–40 minutes. Then add the prunes, cut in half, and continue simmering until the beef is done. By the end, the meat should pull apart into strands and the liquid should have thickened. Add more water along the way if needed. Cooking time depends on the meat — the older it is, the longer it may take. Boiled potatoes, rice, vegetables, or pasta all make a good side.
