Home-Style Braised Goat with Potatoes
Tender, juicy meat with an incredible garlic aroma and flavorful vegetables. Made with young milk-fed goat, this home-style braise is rich and satisfying. The tender goat pairs beautifully with the potatoes.

Step 1:
Gather everything you need for the dish. Rinse the meat well, pat it dry, and cut it into medium pieces.

Wash, peel, and cut the carrots into rings and half-rings.

Peel the onions and cut them into large chunks.

Peel the potatoes and cut them into large chunks.

Add the lard and vegetable oil to a Dutch oven and heat over high heat. Add the meat, stirring, and sear it lightly until golden.

Add the carrots and onions to the meat, cover, and let it simmer until the onions are soft.

Add the spices and bay leaf, and stir everything together.

Add the potatoes, season with a bit more spice, and pour in enough boiling water to cover them. Reduce the heat to low, cover, and cook, stirring, until the potatoes are tender.
