Solomony — Pan-Fried Pork Cutlets in Mushroom Sauce

The meat cooks in just 15 minutes, coated in starch and soy sauce. Serve with any side you like!

  1. Step 1:

    Gather the ingredients for the Solomony.

    Finely chop the onion, and finely chop the mushrooms too.

    Cut the pork into thin slices about 1/4 inch (5–7 mm) thick and pound both sides — I do it under plastic wrap.

    Add 1 tablespoon of vegetable oil to a hot skillet and cook the onion with the sugar and salt until golden, then add the mushrooms. Once their moisture has cooked off, stir in the flour and wait for the toasted flour to give off its characteristic nutty smell.

    Pour in the milk and simmer a few minutes. The flour and milk come together into a sauce. It shouldn't be thick — if it is, add a little more milk. The sauce is ready.

    Dredge the pork in starch, then in soy sauce.

    Lay the pieces in a hot, oiled skillet and fry over high heat for 2 minutes per side. Serve the Solomony hot and juicy, sauce spooned over the top, with a simple fresh tomato salad on the side. Enjoy!
