Step 1:
Make the omelet: beat the eggs with the milk, salt, and pepper. Stir in the herbs, the cheese (chopped or grated — I cut mine into small cubes), and the tomato slices. Mix well. The filling is up to you — you can add sausage, ham, or other meat, different cheeses, vegetables, whatever you like. Cook it in a skillet until set, the way you normally would.

Step 2:
You'll need 1 sheet of lavash; if it's very large, cut it in half. Lay the omelet on the lavash and roll it up like a wrap.

Step 3:
Toast it on both sides in a dry, hot skillet (no oil) until golden.
