  • Take 200 g of pork loin and divide it into two 100 g pieces. Make a few cuts along the fat side (so the steaks don't buckle as they cook), pound them lightly, and season with salt and pepper. Set a small saucepan over medium heat, pour in about 3 tablespoons (40 g) of olive oil, and once it's hot, add the red onion cut into thin wedges. Cook until the onion softens. Squeeze fresh juice from the half orange and half lemon and pour it over the onion, then add the orange marmalade, salt, pepper, and a sprig of rosemary. Simmer for 15–20 minutes over low heat, until the onion is completely soft. Meanwhile, heat a grill pan (a regular skillet works too, but the grill marks look nicer), add the remaining oil and another sprig of rosemary, and sear the pork until cooked through. To serve, set the pork on a plate and spoon the sauce over the top. If you're watching your weight, or just don't care for pork, you can swap it for chicken breast. Enjoy, everyone!
