Apple Fritters with Kefir
Tasty, tender apple fritters — a breakfast the whole family will love! What's better on a Sunday morning than hot fritters with sour cream? There are countless fritter recipes, made with all sorts of add-ins and served with sour cream, jam, or condensed milk. This apple version is a favorite: extra tender and delicious. Kids especially love them — the apple inside adds juiciness and a pleasant little tang.

Step 1:
Gather the ingredients. Use juicy, sweet apples for these fritters. Take the kefir and egg out of the refrigerator ahead of time so they come to room temperature.

Wash the apples, peel them, and remove the cores. If they're fresh with tender skins, you can leave the peel on — it just adds vitamins and nutrients. Grate the apples on a medium grater. Or chop them finely with a knife; that way you'll notice them in the batter with a pleasant crunch, and you won't lose a drop of juice the way you do when grating.

Put the grated apples in a bowl. Add sugar to taste and a pinch of salt.

Crack in one egg.

Stir the mixture until the egg is blended in and the sugar and salt have dissolved.

Pour in the kefir and stir.

Add the flour and half a teaspoon of baking soda to the apple mixture and stir. The batter should have the consistency of thick sour cream.

If you want the fritters extra thick and fluffy, add a bit more flour. Once the batter starts to bubble, let it rest on the counter for twenty minutes — it will thicken a little more.

Heat the vegetable oil in a skillet. Drop spoonfuls of batter onto the pan to form small round fritters. A heavy-bottomed skillet with a lid works best — covering the pan while they fry helps them rise and cook through. Fry over medium heat until golden on the first side.

Then flip and fry about 3 minutes on the second side until golden as well. Transfer the fritters to a paper towel to drain off the excess oil. Arrange the apple fritters on a plate and serve with sour cream, jam, condensed milk, or simply with tea or coffee. Enjoy!
