Buy your chicken breast from a source you trust — it should be fresh, never frozen, since frozen meat is often stale or spoiled. 1. Pour the milk into a bowl and crack in the egg. Add half of the ground paprika and salt to taste, then whisk by hand. 2. Whisk in some of the flour (about 100 grams), continuing until the mixture is like sour cream with no lumps. 3. Rinse the chicken breast under running water and cut it into pieces. Add the pieces to the bowl of batter, stir to coat, and refrigerate for two hours. 4.
